About the Recipe

Delicious chocolate peanut butter quinoa brekkie cups!

Ingredients

  1. 1/4 cup peanut butter

  2. 1/2 cup chocolate chips

  3. 1/2 cup quinoa puffs

  4. 1/4 cup coconut oil, melted

  5. Dash of salt

Preparation

  1. Melt chocolate in a microwave safe bowl, with 1 tbsp coconut oil. Warm up in 20 sec intervals and stir frequently to avoid overheating.

  2. To a large bowl, add quinoa and salt, mix. Then add peanut butter, melted chocolate and coconut oil. Mix well without pressing hard.

  3. Lightly grease a muffin tin/tray and press quinoa mixture into mold and up the sides (slightly hollow in the centre if going for the cup shape).

  4. Refrigerate and enjoy! P.S. we enjoy them on their own, but they're great with almost anything in them!
